I have been trying to find new dishes to try to break up our routine dinners. It’s been no walk in the park, but I’m starting to find things that we can add to the rotation, so we (mainly I) won’t get tired of eating the same thing over, and over again. So this dish turned out to be really tasty and will definitely make again.
Last week I made us some Italian Meatball Sandwiches and was quite impressed with my newfound cooking skills. I unfortunately just eyeballed measurements on mostly everything, so this won’t be the best directional recipe. However, I felt the need to share because cooking a delicious meal and us surviving the next day is an achievement within itself! 🙂

So first I chopped up 1 large onion and 2 large green peppers fajita style.
