While the veggies sautéed, I began to prep my meatball binder. I wasn’t 100% sure how to make meatballs, so I literally just googled how to make meatballs, and used these directions. I didn’t have breadcrumbs so I substituted it for Jiffy Cornbread like I use for my burgers. I didn’t add onions to my mix since I was already cooking them for the sauce, and I used the seasonings of my choice: garlic powder, salt, pepper, Italian, and parsley.
